I am  doing the main seal on a '92 K1100LT. 

With the clutch carrier out, how much movement should be seen on the output shaft? 

I can't seem to find any figure for the k1100 in the clymer

Not sure why you'd measure axial/end float with the clutch housing removed: the front bearing of the output shaft (just behind the oil pump) is a needle roller and floats axially whereas the big back bearing is the one to provide axial location - so long as the clutch housing is installed and tightened up.

Obviously the output shaft will float all over the place radially, without the clutch housing installed. Always worries me  .

The early 2v Ks did have a problem with output shaft axial/end float because the big rear bearing was insufficiently located in the crankcase. The bearing was replaced with a shouldered type to prevent this. The symptom was a variation in the clutch biting point; as the output shaft floated backwards and forwards in use.
