I have got back my old 89 K100RS which the guy I sold it to had got well into a full restoration.  Down to the frame and engine with the valve covers removed.  He passed away so I am uncertain as to what stage he was at with it.  Looking for suggestions please.  Also any recommendations for sources for replacement parts.

BMW parts sources will depend upon what you need. There's always your local dealer, but most use Motorworks & Motobins, and another, whose name I'm forgetting at the mo', are from the UK. Beemer Boneyard in New Jersey (new & used), and Euro Moto Electrics in Colorado can supply quality replacements (new). There's also a myriad of sources on eBay, and not to mention the Buy & Sell section of your favourite K bike forum. Welkome back, and good to hear, however sad for your mate who had the bike for those years between, that you're back on the forum.

Where'bouts in Ontario are you?  

Euromotoelectrics has been a great and reliable supplier but I was having everything shipped to a mailbox in the Falls on the US side.  Paying to have something shipped across the border has been stupid expensive with the emphasis on stupid.  Motobins is probably my number one supplier and shipping has been to my door.  There is a tariff exemption that applies to motorcycle parts coming from the UK and this has made them even more competitive.  My last shipment took a little longer than normal but it hasn't mattered much since I still haven't gotten 'round to using them yet.  If I'm desperate I will go to a local Motorrad dealer but that is rare.

Have fun putting humptydumpty back together again!

Thank you for all the suggestions.  I have numerous new parts but really am uncertain as to where to start as I have acquired a frame and engine with the valve covers off.  First will catalogue the parts and decide what the first step will be.  Lots of hours ahead.

I am looking for an assembly manual to rebuild from frame and engine.  The previous owner took all apart and I am uncertain where to start.  Any suggestions?

Go to realOEM.com and put the last 7 digits of the VIN in and bingo you have the parts break down for your bike.
