I have seen that a few times, they come out of nowhere. I have never been unfortunate enough to hit one on the bike but have collected a few with the car.
They actually are very aware of traffic, they hop up to the edge of the road look both ways and hop out regardless.

Ouch!
I've had one run into the sidecar, I was only doing around 30 pulling out of a rest area. He went all wobbly and hopped in circles then hopped away. Must have knocked a wheelweight off as the front end vibrated after the hit.
Hit one in the car last year, new bumper, new nudgebar, new bonnet, new grille. Thankfully not enough to set the airbags off (carrying 3 older people (75+) at the time. The ABS worked well.

Kangaroobies cannot go backwards, as a car approaches in the evening the headlights shine on them on the side of the road, kinda blinding them, As the car/motorbike gets closer, the headlight (unless it's a beemer K100) shines on them and casts a shadow, that moves around behind them as you get closer. They only respond to the movement behind them and thus jump out almost seemingly in front of an approaching veehicle, as long as it's dark. otherwise you are dealing with brain dead skippies, no known cure.
