So I got the bike to turn over on start fluid sprayed into the air intake. But it dies out after a few seconds. I can even work the throttle a little bit and it revs up but dies shortly after eating up all the starter fluid I spray. Without start fluid, it just cranks but will not turn over. I am trying to work out the electrical on the FI connector. Sparks work, fuel pump works, idk if the fuel injectors are working properly - they have positive voltage on the each connector, but having a hard time diagnosing that... I am wondering if it is a timing issue? Maybe an air flow detection issue? or Hall sensor issue? I will be testing volts and resistances on the LE-Jetronic (EFI) connector soon. Any thoughts on what the issue might be?

Had the same thing happen just a month ago.  Overhauled the injectors - problem solved.  I presume the starter fluid and air mix is happy to burn when the spark fires, but if the fuel injector isn't providing the required air/fuel mix it's a no-go.

Undo the two screws securing the fuel rail and pull it away complete with the injectors (you might have to use a screwdriver to ease each injector out of the head) Hold the rail and injectors over a piece of paper towel and give the starter a quick press. The injectors should spray three or four times. You should see four equal, 2-3cm circles of fuel. This is a quick way of checking fuel delivery.
Take care with the ciggies whilst doing this.

The positive voltage on the injectors is correct.  They are fired when the ECU grounds the other terminal.

If you have positive live on all 4 injectors either it is not grounding at all or you are getting no fuel to the injectors.

I dont think all 4 injectors will die totally at same time so you need to check out 
the neutral/clutch switch,
fuel pump plug into the tank, especially if it is front left on the bolted down tank,
seating of the big plug into the unit under the seat,
fuel lines etc inside gas tank as in filter, pump, basket. Are the connections secure?
any wiring/polarity issues
