Data is somewhat inaccurate.

Said my '91 K100RS was a 2019 BMW K100rs, engine was 95(?).   Report calculated that it had 8 owners.  The Vermont title that came with the bike only shows two owners since new before me.

Did BMW actually assemble bikes in Italy?

AFAIK, only early carburetor F650 singles when Aprilia was still building the Pegaso in Noale, Italy. The Pegaso is what the F650 Strada, Funduro, et al, are based upon.

Interesting that the site listed Duck's K1100RS as being assembled in Italy. 

That together with identifying my '91 K100RS as a 2019 model with 7 previous owners makes me kind of skeptical of their data.

Berlin and Munich were the only two places, until Chinese and Indian factories began putting them together, that Ks, Oilheads and Airheads (Berlin, in the old Spandau prison) were ever built. Thailand has a facility now, as well.

Holy Crap!  The memory of a little Indian guy doing that yes/no figure 8 head thing and saying "soddy, sir" is not in the least bit comforting at 200kph.
